Cheera  Thoran curry ( Malabar spinach stir fried)

Ingredients 

Red cheera 1 bundle 
Onions 2 nos medium sized 
Green chillies 3 nos
Coconut scrapped 1/2 (desiccated coconut 1/2 cup)
Oil 2 tablespoons 
Mustard seeds 1/2 teaspoons 
Salt to taste

Preparing cheera thoran curry 

Heat oil in a thick bottomed pan, add the mustard seeds and allow to pop.  Add the chopped green chillies and sauté for two minutes.  Add chopped onions and sauté for three to five minutes.  Add 1/2 teaspoons of salt and mix well.  The onions must not turn brown.  Add the chopped cheera, mix well with the sautéed onions and cook closing the pan with a suitable lid.  Remove the lid now and then and stir the ingredients thoroughly.  When the cheera is cooked add the scrapped coconut, mix together and cook for two three minutes covering the pan with a lid.  Remove the lid and cook further stirring well till all the excess water is evaporated and the thoran becomes dry.

Serve along with rice, Chappathi or breads.
