Cucumber Raita
In Indian kitchen raitas are used as a salad and it soothes the hot taste of Indian dishes filled with chillies and spices. Moreover its cooling and soothing effect helps to alleviate the harshness of the Indian summer. Yogurts, prepared at home provides a wholesome and healthy side dish.
Ingredients
Yogurt 1 cup
Cumin seeds 1 tsp.
Cucumbers medium size 2 nos.
Green chilies chopped 1 nos.
Red chillies powder ½ tsp.
Coriander leaves chopped 1-2 tsp.
Salt ½ tsp.
Preparation
Peel the cucumbers using a peeler. Cut them length wise and remove the fleshy part inside along with the seeds. Grate the cucumber pieces into a bowl. Squeeze and remove the excess water from the grated cucumbers using your hands and keep aside.
Dry roast and grind the cumin seeds coarsely.
Put the cucumber in a bowl add yogurt, cumin powder, green chillies, red chili powder,salt, yogurt and chopped coriander leaves and mix together. Taste and adjust the salt if needed.
Place the cucumber raita in the fridge for one to two hours and serve alongside spicy dishes.
