Mutton Stew
Ingredients

Mutton 1 kg.
Coconut milk 2-3 cups
Green chilies 5 nos.
Ginger finely chopped ½ tbsp
Coconut sliced ½ cup
Onions sliced ½ cups ( 2 large onions)
Coriander powder 3 tsp.
Turmeric powder ½ tsp
Star anise broken into pieces 4 nos.
Cinnamon a small piece
Pepper powder 1 tsp.
Whole pepper ½ tsp
Cloves 5 nos.
Cardamom pods 5 nos.
Oil 2 tbsp.

For seasoning

Oil 2 tbsp.
Shallots sliced 2 tsp
Curry leaves 1 sprig
Red chillies 2 nos.

Preparation

Cut, wash and drain the mutton and keep aside.
Heat oil in a pan and add sliced onions, ginger and green chilies and saute well. When the onions turn in colour add star anise, cardamom, cinnamon, cloves and the whole pepper to it and sauté well. Now add coriander powder, turmeric powder and fennel powder and salt to the pan and mix well.
Immediately add the mutton to the pan and mix it with the spice mix in the pan.  Add one cup of the coconut milk and two cups of water to it and cook for half an hour with closed lids.  Don't forget to stirr occasionally.
When cooked, add the remaining coconut milk mix together and remove from heat.
For seasoning heat oil in another pan, fry the red chillies, sliced shallots and curry leaves and when done pour over the prepared mutton stew.
Serve along with appam, bread or rice.
