Puliyinchi the ginger tamarind curry

puliyinchi (tamarind ginger curry)


Ingredients

Ginger finely chopped 250 grams.
Tamarind paste 2 tbsp.
Green chillies sliced 10 nos.
Chilli powder 1 tsp.
Jaggery/raw sugar 2 tbsp.
Curry leaves 2 sprig.
Mustard seeds 1/2 tsp.
Salt to taste
Oil 3 Tbsp.

Preparation.

Heat oil in a pan add mustard seeds and allow to pop.
Add chopped ginger and sliced green chillies and sauté well.
Add the curry leaves and sauté for a minute.
Dilute/dissolve the tamarind paste in 1 cups water and add to the pan.
Add the Chili powder.
Mix well stirring the ingredients.
Add salt and raw sugar mix well.
Allow to boil stirring well till the required consistency is reached.
Remove from heat and allow to cool.
Can be served as a sauce or dip or curry.
Can be stored in an airtight container for a few days or weeks.
