Brinjal Green Chilli Curry

Brinjal Green Chilli Curry.

Ingredients

Aubergines Brinjal the long type 500 gms.
Ginger chopped 2 Tbsp
Garlic chopped 5 cloves
Green chillies 5 nos.
coriander leaves chopped 1 cup.
Salt to taste.
Vegetable oil 2 Tbsp.

Preparation.

Make shallow slits all over the Aubergines using the tip of a sharp knife.
Grind the gingeer, garlic, green chilliesH coriander leaves and salt to a fine paste. Smear the aubergines with the paste.
Heat oil in a pan and place the prepared aubergines in the oil, close the lid and cook on low flame for 5 minutes. Remove the lids, turn the sides of each aubergines, smear the rest of the ground paste over the aubergines and cook for 10 minutes with closed lids.
When cooked remov fthe lidh mix the contents together and cook with open lids till the excess water is evaporated.
Remove from heat and serve garnishing with coriander leaves.
