Aloo Bhujia.
Bhujia a
crispy snack which has its origins in and around the Bikaneer town of Rajasthan
primarily used besan and moth beans flour as its main ingredients.
Here for
our Aloo Bhujia we use potatoes and besan flour as the main ingredients.
Ingredients
Potatoes
250 gm.
Besan flour
2 cupsChat masala ½ tsp
Chilli powder ½ tsp
Garam masala ½ tsp
Asafoetida 1 pinch
Salt to taste
Oil to fry
Preparation
Boil the
potatoes till cooked adding enough water.
Peel the skin away and mash the potatoes into a bowl.
Add chilli
powder, asafoetida powder, garam masala and salt and mix well.
Add the
besan flour, mix well and and knead to a fine dough. Add water if needed.
Heat oil in
a pan.Fill the dough into an idiyappam press or sev mould and press it directly into the hot oil and fry till golden brown and sieve from oil.
Place them on kitchen tissue paper napkins to remove excess oil.
Sprinkle
chat masala and dried mint leaves over it and serve.
